La Rotonde – Le Negresco
It took six months to restore one of the most emblematic places in Nice: La Rotonde, the brasserie of the reputed hotel Le Negresco. The project was developed by Studio MHNA which had already restored the aile Rivoli. In 1984, Madame Augier had in mind to harmonize classic and modern art; this premise was respected at the time so one could appreciate Louis XIII pieces alongside with XX century works.
Walls are covered with golden leaves while the famous white horses are always present. The ceiling has an amazing surprise for clients: a video projection of an Italian blue sky modulates the ambience; at night, it changes into a starry night sky. In this majestic entour the new chef Virginie Basselot performs her culinary savoir faire. The one star Michelin chef has also the title of Meilleur ouvrier de France. Chef Basselot specializes in the label “Cuisine Nissarde”, i. e. the cuisine typical of the region.
All the niçois dishes are made with products coming from certified nearby suppliers (95%). This is one of the reason why Le Negresco has got the label EPV (Entreprise du Patrimoine Vivant) and the Ecolabel. All these elements add up in order to preserve the initial aim of Madame Augier: to make of La Rotonde a real French brasserie where people can meet and chat while tasting typical and authentic French dishes.
