Colette – Hotel Sezz Saint-Tropez

According to Sidonie-Gabrielle Colette, the French novelist, “If you are not capable of a bit of witchcraft, don’t trouble yourself with cooking”. That could be the motto at the Colette restaurant in the boutique Hotel Sezz Saint-Tropez.
This ninth season opened mid-April, and a new Signature cocktail by Chef Barman Étienne Frebault-Moussaoui, is available in the Dom-Perignon Bar. It is in myxology that this witchcraft referreb by Colette is more evident. The new cocktail is called “Worldwide” and has a worldwide mix of spirits: Pisco Waqar and Sake; the acid note comes from lemon, while the Mediterranean touch comes from Mimosa syrup.
Since last year, chef Nicolas Gautier is in charge of the kitchen at the Colette restaurant. An already experienced chef (England and Spain), he is also in charge of the chic Barbecue that offers fine cuts as Boeuf Charolais and Salers from France, Black Angus from the United States, Wagyu from Chili, Quercy lamb and even grilled Iberian pork.
Of course, the region inspires most of the dishes rendering a cuisine with freshness and refined simplicity. Saffron, yuzu, cumin or rosemary are as well present. Moreover, a light fragrant menu for those who wish to enjoy it around the pool and a gastronomic menu in the evening are proposed.
The Colette Restaurant has capacity for 70 covers on the terrace and 50 covers inside. The restaurant is closed every Monday and Tuesday evenings.
