Les Oliviers (Bandol) – first Michelin Star
Chef Jérémy Czaplicki has just been awarded a Michelin star for his cuisine at the Gastronomic restaurant in the Hôtel Ile Rousse (5*). At his arrival in 2016, chef Czaplicki imposed his style and obtained from the first year an « Assiette Michelin » as well as three « Fourchettes rouges » in the prestigious guide.
Jérémy Czaplicki has cooked in different famous starred restaurants. After a first experience in Toulouse at Jardin de l’Opéra with the emblematic Chef Dominique Toulousy, he went to Paris where he worked for many high-status restaurants: La Tour d’Argent, La Cantine des Gourmets, the Hôtel Scribe and the Palace Park Hyatt Paris Vendôme with Chef Jean-François Rouquette for 15 years.
Three years ago he decided to move to Provence in order to lead the kitchen of a Relais & Châteaux, the Château de Berne at Lorgues, where he manages the restaurant Les Oliviers of the Hôtel Ile Rousse Thalazur Bandol. His philosophy is to conceive a dish by which he can transmit his passion.
His success is due to not only to his creations but to the products he likes too. Razor clams adorned with green peas of Rocbaron seasoned with black garlic from Seyne-sur-Mer, Saint-Pierre highly-seasoned with gray shrimp stock served with tartare of Mediterranean gambas or even the famous île flottante with caramelized hazelnuts, streusel lightly added with cacao and black truffles; they are the specialties of the Chef Jérémy Czaplicki.
